How to make a quick dinner: grilled salmon with lemon
Ingredients
4 slices of salmon fillets;
Salt, ground black pepper to taste;
2 tablespoons olive oil;
¼ cup white wine;
1½ lemons;
2 cloves of garlic;
A pinch of red pepper;
2 tablespoons butter;
1 lemon;
2 tablespoons fresh dill.
Preparation:
Place a large skillet over medium heat, heat oil and place fillets skin-side up. Season with salt and pepper. Saute until golden, then flip.
Add the wine, juice of 1 lemon, minced garlic and red pepper. Bring to the boil, pouring over the fillets with the sauce.
When the salmon has darkened, remove it. Melt the butter and add the juice of ½ lemon in a pan. Stir well. The sauce should cook until it thickens. This will take about 2 minutes.
Pour the sauce over the fish, garnish the dish with dill and lemon slices.
2) Omelet with mozzarella
How to cook a quick dinner: scrambled eggs with mozzarella
Ingredients
350 g of ripe tomatoes of different colors;
2 spoons of olive oil;
Red wine vinegar, salt, ground black pepper to taste;
15 g fresh basil;
½-1 fresh red chili pepper;
100 g mozzarella;
4 large chicken eggs.
Preparing
Slice tomatoes into circles, season with ¹⁄⁄₂ a tablespoon of olive oil, red wine vinegar, salt and pepper.
Crush most of the basil leaves with a pinch of salt to a mush and mix with 1 tablespoon of olive oil. Then finely chop the chili peppers and mozzarella.
Heat ½ tablespoon of olive oil in a large skillet. Whisk and pour in the eggs, stirring them, but don't finish. Place the cheese in the center of the pan, drizzle everything with the oil and basil mixture. Allow to cool slightly.
After a minute, gently fold the omelet in half and place on top of the tomatoes. Cut it in the center, breaking open the mozzarella. Add the chili peppers and garnish the dish with the remaining basil leaves.
