Chocolate roll-peel with cottage cheese cream
INGREDIENTS
flour - 4 tablespoons.
cocoa powder - 2 tablespoons.
ground cardamom - 1/2 tsp.
ground cinnamon - 1/2 tsp.
ground ginger - 1/4 tsp.
potato starch - 1 tbsp.
20% sour cream - 1 tbsp.
liquid honey - 1 tbsp.
egg - 2 pcs.
leavening agent for dough - 1 tsp.
for decoration: bitter chocolate - 1 bar
powdered sugar - 2 tsp.
for cream :
5 % cottage cheese - 200 gr.
20 % sour cream - 100 gr.
liquid honey - 2 tbsp.
STEP BY STEP RECIPE
Step 1
For the dough, mix all the dry ingredients, add to them whipped eggs, sour cream, honey. Mix everything well and pour onto a baking tray lined with parchment paper. Cook at 180 degrees for about 20 minutes. Check the readiness with a splinter. Turn the finished hot biscuit onto clean baking paper, then quickly turn it back onto a damp towel and roll it up again. For the cream, mix together the cottage cheese, sour cream and honey. After about 10 minutes, unroll the roll and smear the cottage cheese cream. Roll up again.
Step 2
Sprinkle the roll with melted chocolate and make patterns with a fork. Sprinkle with powdered sugar. Keep the cottage cheese and logs in the refrigerator until served. Have a wonderful New Year, may your deepest wishes come true!
