How to cook khachapuri:
Khachapuri is prepared using unleavened, yeast-free dough. The best traditional choice for stuffing is Imereti cheese, but if it's not on hand, you can substitute with suluguni or another type of cheese.
Ingredients:
Flour - 2 Cups (ingredients for the dough)
salt - 1/2 teaspoon
sugar - 1/2 Teaspoon
baking soda - 1/2 teaspoon
yogurt - 3/4 cup
mozzarella cheese - 200 grams (ingredients for the filling)
feta cheese - 150 grams
salt - 1 Seed (as desired)
Black pepper - 1 Piece (optional)
Number of servings: 4
Preparation:
Mix dry ingredients and add yogurt. Knead into a soft dough. It should stick to your hands slightly. Cover the finished dough with plastic wrap and let it rest. Mix all the ingredients for the filling and make 4 balls from the resulting mass.
Stretch the dough and cut it into 8 equal pieces. Roll out each piece of dough using a rolling pin. Place the cheese filling between two rounds of dough. Flatten the edges and roll out again with a rolling pin.
Heat a frying pan over medium heat. Place the pancake in the center and cover. Cook for 3 minutes per side.
