Laghman in the multicooker is an adapted recipe of the favorite oriental dish. It originally came to us from Central Asia. It is prepared by Uzbeks, Tajik Tatars, as well as Uighurs, once inhabiting the south of China, who are considered the ancestors. The dish quickly gained popularity, and as a consequence, a variety of cooking options. Traditional lagman consists of two parts: flat long home-made noodles and waji (stewed meat with vegetables). Meat is usually understood as lamb, less often beef. But you can not be surprised if you try lagman with chicken or turkey. In our recipe, we will use beef. For flavoring, we will add turkey fat. All the other ingredients of the classic dish we keep. A traditional lagman is cooked in a cauldron. We suggest simplifying the task and using a multicooker. Believe me, it will be delicious!
INGREDIENTS
Beef fillet - 900 g
bacon fat - 120 g
sweet bell pepper - 2 units
carrots - 2 units
celery - 3 stalks
onions - 2 units
radish - 150 g
Chinese cabbage - 1 small sprout
potatoes - 4 units
broth - 1,5 l
Hot red pepper - 1 pc
garlic - 3 cloves
coriander - 1 bunch
vegetable oil - 60 ml
salt - 3 g
ground black pepper - 3g
For the noodles:
flour - 550 g
water - 200 ml
salt - 2 grams
egg - 1 pc
vegetable oil - 40 ml
STEP BY STEP RECIPE
Step 1
To prepare lagman in the multicooker prepare the meat. Rinse beef flesh, dry it. Cut off streaks and membranes. Cut it into equal slices. The fat of the fat - in small cubes.
Step 2.
Prepare the vegetables. Rinse them thoroughly under running water, then dry them. Peel bell peppers from seeds and stalks, and cut the flesh into cubes. Dice peeled radishes, carrots and potatoes into the same pieces. Also chop celery and Peking cabbage (you will need only the white part of it). Peel the onion and garlic. Cut the onion into rings and pass the garlic through a press.
Step 3
In the bowl of the multicooker put the bacon and turn on the mode "Roast". Cook, stirring, for about 20-30 minutes. Pour some vegetable oil and put the beef. Cook, stirring, for 10 more minutes.
Step 4
Add onions and carrots to the meat. Season with salt and pepper to taste and mix. Then add the rest of the vegetables: potatoes, bell peppers, garlic, radish, cabbage, cilantro and hot red pepper. Pour in the broth. Turn the multicooker to "Stew" mode and cook for about 1 hour.
Step 5
Prepare the noodles. Sieve the flour through a sieve. Mix water with salt and egg, whisk slightly. Make a well in flour and pour in egg mixture. Knead into a stiff dough. Roll it into a ball, place in a bowl, cover with clingfilm and leave to rise at room temperature for 1 hour.
Step 6
Divide the dough into two parts. Each of them on a lightly floured surface, roll out into a thin layer. Cut thin strips. Pour vegetable oil into a dish and dip strips of dough into it. Leave for 2 minutes, then roll out each piece, pulling out with a long noodle.
Step 7.
In a pot boil water, salt, put the noodles and cook until tender (about 8-10 minutes). Then flip them in a colander and let them soak in cold water for a couple of minutes. Allow it to drain. Arrange the noodles in bowls, top with the flavorful beef and vegetables and gravy. Sprinkle with cilantro and serve.
