Cake with sour cream. "Count's Ruins"

To prepare the cake "Earl's ruins" with sour cream, prepare the necessary products (see photo).

Break the eggs in a bowl, add sugar, beat the mass very carefully with a whisk.

Combine the eggs and sugar.

 

Then add sour cream and continue whisking.

Add the sour cream and whisk.

 

Knead baking soda and add it to the batter. Sift in the flour. Knead the dough thoroughly with a spoon.

Add the flour.

Pour 1/3 of the batter into a parchment-lined 23 cm. tin.

 

Pour the dough into the tin.

Preheat the oven to 180 degrees and bake the light biscuit for 15 minutes.

Bake the light biscuit.

 

In the remaining 2/3 of the dough add 2 tbsp of cocoa and 1 tbsp of sour cream. Again, mix the mixture thoroughly.

Add the cocoa.

 

Pour the chocolate batter into another mold lined with parchment.

Pour the chocolate biscuit batter into the mould.

 

Bake the chocolate cake for 20-25 minutes. It turned out a little uneven, but in this case it does not matter, the most important thing is that it is very soft and delicious!

Cool both biscuits. The chocolate one - cut into cubes.

Dice the sponge cake.

 

For the cream, whip the sour cream with powdered sugar. In this case, I always use homemade heavy sour cream, it is a guarantee that the cream will turn out perfect. For more on how to make sour cream, see here.

 

Beat the sour cream and sugar.

 

Lay the light biscuit on a plate, soak in syrup or diluted sweet liqueur, and smear with the sour cream. Cut tangerines into circles and spread them over the cream.

Put cream and orange on top of biscuit.

 

Then dip pieces of chocolate biscuit in sour cream and lay them in a chaotic pile. The cubes should be pressed slightly on top, so that there are no voids in the cake.

When the cake is assembled, prepare the frosting. To do this, pour sugar and cocoa into a ladle, add sour cream and butter. On a low heat stir the mass until homogeneous. Pour the cake with icing on top, then sprinkle with chopped walnuts.

 

Pour the frosting over the cake.

Take the cake to the fridge for a few hours to soak. Cake "Earl's ruins" with sour cream is ready - you can serve.
