If you haven't made this yet, I highly recommend trying it. You can experiment a lot with it by adding different fruits, berries or nuts. Here we go.

In a saucepan put honey, sugar, sour cream, egg, baking soda. Stir, add butter and put the pan on a water bath. Periodically stirring, keep in the bath for 20 minutes, the mass becomes foamy.
Heat the sour cream with the egg, soda and honey.
We give a little bit to cool and add flour in the warm, mix well, I trust this process to a combine.
Pour in the flour.
The consistency of the dough for "Medovik" on sour cream - as in the photo, you want to add more flour, but you do not need to do so. Take the dough to the cold for 15 minutes, during this time it will cool and become denser.

In the meantime, you can get busy making the sour cream.
Ingredients for the cream
Beat the sour cream with sugar until creamy. If you used 30 % cream, the cream should be similar to the picture, but not too runny. Do not beat the sour cream, so that it does not turn into butter.
Whisk the sour cream with the sugar.
The cooled dough is divided into 6 parts. Roll out each piece into a 3 mm thick circle and cut out on a plate.

Bake in preheated 180 degrees oven for 6-8 minutes(!).

After baking, the cakes should remain soft - not overdried and not browned. Bake the scraps from the shortcakes as well - they are needed for sprinkles.

Let's proceed to assemble the Medovik. Smear the cooled cakes with berry jam with sourness.
Butter the cakes with the jam.
Then we put a layer of cream. You can add cherries or other chopped fruit to taste and desire.
Spread cream on top of the layer with jam.
Then next layer and so on. Butter the cream on top and sides.
To assemble the cake
Shred the trimmings into crumbs and sprinkle the cake with it.
Crumble the cake into crumbs.
Take the cake to the fridge to soak. If you didn't over-dry the cakes when baking, the cake will soak in a few hours.
