STEP BY STEP PREPARATION
STEP 1:
How to make a cold soup with kefir and cucumber? Very simple and quick. First, prepare the necessary ingredients according to the list. You can take kefir of any fat content. I have 3.2%.
STEP 2:
Wash your cucumber thoroughly. If the skin is not rough, damaged or bitter, you do not need to peel it. My skin was a little tough, so I removed it. Cut the cucumber into small cubes.
STEP 3:
Wash and dry the green onions. Cut the green onions into rings. You can slice along with the white bottom of the feathers or just the green stems. If you don't like onions and garlic too spicy, you can replace them with green cherries, which have a similar but milder onion and garlic flavor.

Finely chop the dill, parsley, and cilantro. You can pick up, add to or replace the greens to your liking. You can add more mint, spinach, ramson, etc.

Peel the garlic cloves and finely chop or squeeze them. If you don't like the taste of strong garlic in your soup, you can reduce the amount or not add it at all.

Pour in the cooled kefir. Salt and pepper the soup to taste. You can reduce or increase the amount of kefir depending on the desired thickness of the soup. The fat content of the kefir influences the density of the soup. The higher the fat content, the thicker the kefir itself and, accordingly, the soup as a whole.

Stir everything thoroughly. Cold kefir soup with cucumbers, garlic and herbs is ready. Serve immediately with a piece of rye bread. The soup is delicious, easy to prepare and budgetary in ingredients. Bon appetit!
Instead of kefir you can take drinking natural yogurt without additives. It would be delicious with matzo, but then the soup needs to be diluted with drinking water.
In addition to cucumber, you can add other vegetables to the soup. For example, tomatoes (regular or cherry), celery stalks or radishes (by the way, as refreshing as cucumber).
