Eggplant appetizer with feta and garlic

Ingredients

Eggplant - 2 pcs.

Tomato - 1 pc.

Feta cheese - 120 gr

Sour cream - 1-2 tbsp.

Garlic - 3-4 cloves

Salt, pepper - to taste

Fresh dill - 0.5 bunch

Sunflower oil - for frying

Parsley - for serving

Step by step recipeย 

I don't know about you, but I really love eggplant! When the season starts, I start making lots of different appetizers and salads with eggplant. One of my favorite appetizers - eggplant with feta and garlic - I want to bring to your attention.

In this version, I used feta cheese, since I like it best, but brynza or suluguni would work great. You can even make it with cottage cheese, it would also be very tasty!

Cut eggplants into 1 cm thick slices, put them in a bowl and salt them. Leave for 30 minutes.

Then blot the eggplants with paper towels and fry in a frying pan with a minimum of sunflower oil.

Place the eggplants on a napkin to remove any excess fat.

Mash the feta with a fork, add the sour cream, chopped dill and garlic. Add salt to taste, as the cheese already contains salt. Mix the mass well.

Spread the stuffing on the eggplant slices - about a tablespoon.

Cut tomato slices and put them on top of cheese mixture. Sprinkle with salt and pepper from the mill. Decorate with greens.

Eggplant appetizer with feta and garlic is ready.
