German-style potato noodles: delicious and unusual

0.5 kg of potatoes

 2 tbsp flour 

2 egg yolks 

1/2 tsp. salt 

2 tbsp. butter

 A pinch of freshly ground nutmeg 

 

1 Boil jacket potatoes until tender, about 30 minutes.

2 Peel the boiled potatoes and mashed potato them through a mashed potato press.

3 Add the sifted flour, egg yolks, nutmeg, and salt to the mashed potatoes in a bowl and knead into a stiff dough. If necessary, add more flour to make the dough more pliable. Allow the dough to rest for 15 minutes.

4 Place the dough on a floured surface and form it into a slightly flattened, palm-width sausage. Cut the dough into small pieces

5 Shape each piece into a cone-shaped, elongated cylinder by rolling the dough between the palms of your hands. The potato noodles should be thick in the middle and pointed at the ends.

6 Melt the butter in a frying pan. Add the potato pieces in a single layer to the pan and fry them on both sides until golden brown.

7 Remove the finished German-style potato noodles from the pan and serve warm
