Here I will tell you how to make the most delicate American Pie

Ingredients

 

For the dough:

 

Wheat flour (200 ml volume): 2 cups.

Butter (cold): 130g.

Powdered sugar: 2 tablespoons.

Water (cold): 3 tablespoons.

Vanilla infusion (if desired, you can substitute 1 tsp. vanilla sugar): 1 teaspoon.

For stuffing:

 

Apples (medium apples, preferably with a sour taste): 6 pcs.

Starch (if necessary): 1 tablespoon.

Cinnamon: 1 teaspoon.

Sugar (or to taste): 4 tablespoons.

Lemon juice (or to taste): 3 tablespoons.

How to cook

Step 1:

Prepare the products according to the list. If you wish, you can replace some of the water with egg yolks, then the dough will be even more tender! The butter should be room temperature, take it out of the fridge beforehand.

Step 2:

I kneaded the dough in a food processor, but it's also very easy to do by hand. In the bowl of a food processor, sift the wheat flour, add the powdered sugar and diced butter.

Step 3:

Grind the flour, butter, and powdered sugar into fine crumbs. If kneading by hand, either chop the mixture with a knife or grind the butter and flour with your hands, but then proceed very quickly so that the butter doesn't melt with the heat of your hands. Add the vanilla infusion and some of the water to the buttercrumb mixture.

Step 4:

Knead the dough. Add water in small increments until the dough begins to clump together. (Don't add all the water at once, you may need more or less water!).

Step 5:

Roll the finished dough into a ball, flatten slightly, wrap in clingfilm, and send to the fridge for 20-30 minutes (it's better to leave it for an hour, of course, but I'm always short on time).

Step 6:

While the dough is resting, let's do the filling. Wash the apples, peel and core them. Slice the apples into slices.

Step 7:

Mix apples with cinnamon, sugar and lemon juice (you can add some lemon zest if desired) in a separate bowl. Stir. If the apples are very juicy, add 1 tbsp. of starch.

Step 8:

Divide the dough into 2 parts. One part should be slightly larger than the other.

Step 9:

Roll out the larger portion of the dough to the size of your mold, taking into account the sides. Place it in a greased bowl and make a rim. Place the apple filling on top. Flatten out.

Step 10:

Roll out the second piece of dough thinly, cut into even strips and grid them to cover the pie. Pinch the edges with your fingers with the sides of the pie. Before baking, if desired (this is not necessary at all), brush the pie with a brush soaked in milk. This will give it a brighter crust.

Step 11:

Bake in a preheated 180C oven for about 30-40 minutes (refer to your oven!). Let the finished pie cool slightly, sprinkle with powdered sugar and serve.
