How to cook corn properly

The corn season is heating up, which means it's time to learn how to properly select and cook this, everyone's favorite, product.
At first glance, there doesn't seem to be anything complicated about cooking corn, but depending on when and how you cook it - the taste of the finished dish can vary greatly.
Corn varieties
Corn comes in two different varieties: feed corn and sugar corn.
Feed corn is grown for cattle. It can be eaten by people, just not as sweet as sugar corn. The cobs of feed corn are oblong in shape - they are about 25 centimeters long.
Sugarcorn cobs are shorter (about 15 cm) but thicker.
How to choose corn
In order for the corn to be soft, tasty and juicy, you need to choose the right cob. Fresh corn is sold in season - late July and August. Choosing corn at that time you will hardly find bad cobs, but you should pay attention to the following aspects:
Leaves - they should be fresh. Dry and yellow leaves on the cob indicate that the corn has been lying for a long time, which means that it will be tough and not as tasty. Corn that is sold without leaves is also not worth taking.
The corn kernels should be fresh and closely spaced. Be sure to unroll the cob and check the kernels.
The color of corn should be light yellow. The more yellow corn - the older it is.
How to cook corn
Before we share with you a delicious recipe, let us tell you a few simple rules:
Use a large pot with a thick bottom to boil the corn.
Peel the corn of leaves and lint just before cooking.
Don't cut the corn into pieces; cook it whole to preserve the juice as much as possible.
How long to boil the corn.
Bring water to a boil. Place the corn in the pot.
Add some butter to the pot.
Cook the corn for 20 minutes on medium heat. Salt the water 5 minutes before it is ready.
Drain the water, put the lid on the pot, and wrap it in a towel. Leave it for 15-20 minutes more.
Corn cooked this way turns out very tasty, juicy and tender.
