How to choose and prepare the meat

Pork ribs come in two varieties: loin on the bone and breast ribs. The first version has a lot of meat and almost no fat - the best option for baking. And breast ribs are good for stewing and boiling: the pork in this part of the carcass is more rigid and fatty, so it does not cook so quickly.

Next you need to prepare the meat:

Carefully remove the foils.

Remove excess fat on the outside, otherwise it will start to melt and burn.

Slice the meat. For baking, you just need to remove the small parts around the edges, so that all the bones are the same size. For stewing, it is better to cut the piece into slices of two or three ribs each.

Tip

The leftover meat scraps will make a delicious and rich broth for soup.

How to cook ribs correctly

You can cook ribs in the oven or on the grill. The frying pan is not suitable for this purpose, because the secret of melting meat is in the uniform heat on all sides.

If you have a professional grill or a powerful oven with the same function, act as follows:

Marinate the meat. The fastest way is to dilute baking soda in warm water: one teaspoon per 250 g. Leave the ribs in the mixture for half an hour. Then rub the meat with olive oil, salt and spices and let stand for another hour.

Bake the ribs wrapped in foil over low heat for three to four hours.

Remove the foil and roast until crusty.

Even if you only have an old oven at your disposal, do not get upset: in this case, the meat should be boiled before baking. In boiling water for flavor add vegetables: an onion, a head of garlic and carrots. From spices choose ginger, cloves, badjan, allspice and cardamom. After 40 minutes of cooking, grease the pork, wrap it in foil and send it to the oven for an hour and a half.

How to make the sauce

The most important thing in the dish is a crispy crust. To do this, you need to grease the ribs with homemade barbecue sauce, and half an hour before cooking, remove the top layer of foil so that the sauce has time to caramelize.

There are many recipes for such sauces, but the main ingredients are tomato paste, honey or brown sugar, and chili peppers. To make it even tastier, add balsamic vinegar and any spices to taste. The mixture should be heated in a saucepan, quickly spread on the meat and serve.
