Frittata with zucchini and tomatoes is the perfect Italian breakfast, which is either an omelet or a casserole. The main role in this dish is played by the filling, which can be absolutely any. Another distinctive feature of frittata is that it is fried in a pan, and then sent to finish baking in the oven. The egg can be filled with any type of vegetables, cheese and spices. We suggest you try cooking a delicious frittata with zucchini and tomatoes.
For one serving of the dish we will need:
0.5 zucchini;
1 tomato;
2 eggs;
1 bundle of greens;
salt and spices to taste;
vegetable oil for frying;
50g of hard cheese.
It is important that the zucchini should be young, slightly green. This will allow the dish to reach readiness faster and be tender to the taste. It is also worth remembering that if you braise vegetables separately, it is worth chopping them coarsely, and if you mix them together with eggs, it is recommended to use a grater. It is also important to add more herbs, as the zucchini itself does not have much flavor.
In the classic frittata put hard cheeses, but it is not forbidden to use bryndza, mozzarella and suluguni.
It is also worth paying attention to the pan used. It is important that it can be sent to the oven for baking.
So, to prepare frittata, carefully wash zucchini and tomatoes, and dry them with a paper towel. Cut the vegetables into rings about 8 mm thick.
In a bowl we beat the eggs. Add the herbs, spices and salt. Then add 2 tablespoons of drinking water, which can be replaced with sour cream or milk in the same proportions. Whisk everything thoroughly until homogeneous.
Heat a frying pan with vegetable oil. Roast zucchini until golden brown, placing them close to each other. On top of seasoning and lightly salt, lay the tomatoes, which are also slightly salted.
Pour the vegetables with the egg mixture and leave everything on the fire, covered with a lid. Fry the omelette for 5 minutes, then sprinkle with cheese and put it in the oven for 5 minutes.
The finished hot frittata is served to the table, previously garnished with herbs, as well as your favorite sauce.
