How to make tasty pani puri

Pani Puri is a popular Indian street food made of crispy, hollow puri filled with a mixture of spicy potatoes, chickpeas, chutney, and tangy tamarind water. Here's a simple recipe for making Pani Puri at home:

 

  • 1 cup of semolina (suji)

  • 1/4 cup of all-purpose flour (maida)

  • A pinch of baking soda

  • Salt to taste

  • Oil for frying

  • 1 cup of boiled and mashed potatoes

  • 1 cup of boiled chickpeas

  • 1/4 cup of tamarind pulp

  • 1/4 cup of mint leaves

  • 1/4 cup of coriander leaves

  • 1 green chili (adjust according to your taste)

  • 1 tsp of cumin powder

  • 1 tsp of chaat masala

  • 1 tsp of black salt

  • Water as required

Instructions:

  1. In a mixing bowl, add semolina, all-purpose flour, baking soda, and salt. Mix well.

  2. Add water slowly and knead into a smooth dough. The dough should be neither too soft nor too hard.

  3. Cover the dough and let it rest for 10-15 minutes.

  4. In the meantime, prepare the filling by mixing mashed potatoes, boiled chickpeas, cumin powder, chaat masala, black salt, and salt to taste. Mix well.

  5. In a blender, add mint leaves, coriander leaves, green chili, tamarind pulp, and water. Blend well to make a smooth paste. Add more water if required to make the pani (water) thin.

  6. Heat oil in a deep frying pan.

  7. Divide the dough into small balls and roll them into thin circles.

  8. Cut out small circles using a cookie cutter or any other round object.

  9. Fry the puris in hot oil until they turn golden brown.

  10. Remove the puris from the oil and place them on a paper towel to absorb excess oil.

  11. To assemble, gently make a small hole in each puri using your finger.

  12. Fill the puri with the prepared filling.

  13. Dip the filled puri into the pani and enjoy!

Note: You can adjust the spiciness and tanginess of the pani according to your taste by adding more or less green chili and tamarind pulp.

Assemble the panipuri: Gently crack a small hole in the top of each puri shell. Stuff a small amount of boiled potato and chickpeas inside the shell. Add a pinch of chopped onions, and a spoonful of the mint-coriander chutney.

 

Dip the assembled puri into the panipuri water. Place the entire puri into your mouth and enjoy the burst of flavors!

 

Repeat the process with the remaining puri shells and ingredients.
