How to make tomato sauce for spaghetti:
1)peel the tomatoes from the watery pulp and seeds (do this over a bowl so that the tomato juice drains into it). Chop the flesh of the tomatoes finely. Do not pour the juice out of the bowl, it will be needed.
2)Prepare the tomato sauce for the spaghetti. Heat 2 tbsp oil in a large frying pan over medium heat, place garlic in the pan, stirring for about 30 seconds. Place the chopped tomatoes in the skillet, pour in 0.5 tsp. salt and pepper, and the reserved tomato juice. Increase heat to medium-low; cook, stirring, for 15 minutes.
3) In a large saucepan, bring 5 liters of water to a boil, add 2 tablespoons salt, place spaghetti, cook until al dente, according to package directions. Drain the spaghetti by reserving 1/2 cup of the water in which it was boiled..
4)Place spaghetti in skillet with tomato sauce, add 1/2 cup of reserved liquid, cook about 5 minutes, stirring. Add basil, stir to combine.
5)Serve spaghetti and tomato sauce on serving plates, drizzled with remaining olive oil and sprinkled with cheese.
