The monsoon season has just begun! How about a Hot Cup Of Soup to drive away the monsoon chill? Doesn't it sound Comforting! The goodness of Garden Vegetables along with Crunchy Noodles. This soup is healthy, hearty, tasty and very easy to make.

Ingredients

1 cup cabbage (finely chopped)

1/2 cup carrot(finely chopped)

7-8 french beans (finely chopped)

1/2 cup Mushroom (finely chopped)

1/2 cup Spring onion greens (finely chopped)

1/2 cup Spring Onion bulbs (finely chopped) or medium size onion

3 tbsp Cornflour
-
1 1/2 tsp Red Chilli Sauce
-
1 1/2 tsp Tomato Ketchup
-
1 tbsp Soya Sauce
-
1 inch ginger (finely chopped)
-
7-8 garlic Cloves (finely chopped)
-
1 green chilli (finely chopped)
-
3 cup Vegetable stock (Vegetable Stock recipe given below)

1 cup boiled noodle
-
1/4 tsp Pepper powder
-
1/4 tsp Sugar

as per taste Salt

Method For Preparing Crispy Noodles~
Step 1
In a bowl take 1cup boiled noodles. Add 1½ tspn Cornflour and give it a mix. -
In a Kadhai heat some oil. It should be medium hot. Now drop in the boiled noodles. And fry them on medium high heat until golden brown.
Remove from heat, cool it and store it in an airtight container. -
Method for the Vegetable Soup~
In a wok or a big kadhai heat 2 tbspn oil. Add ½cup finely chopped spring onion bulbs or onion finely chopped. To this add 1" ginger finely chopped and 7-8 garlic cloves finely chopped. Saute slightly. -
Now add in 1cup finely chopped cabbage, ½ cup carrot, ½ cup mushroom, 7-8 french beans finely chopped and 1 green chilli finely chopped. Saute this for a minute.

Now add ¼tspn sugar, ¼ tspn pepper powder and salt to taste. Mix it well.

Add 1½ tspn Red chilli sauce, 1½ tspn Tomato Ketchup, 1 tbspn soya sauce and mix it well.

Now add 3 cups vegetable stock. Mix well and cover the lid. Let the soup simmer for 1min and then open the lid.

In a bowl take 1½ tspn Cornflour and 2tbspn water. mix it well and pour it in the soup. Mix it well. Now add finely chopped spring onion greens. Bring it to a boil and then turn off the flame. Our Vegetable Soup is ready.
