The pancake batter should be allowed to rest for about 10-15 minutes, so that during this time the gluten in the flour will swell, and the pancakes will be elastic and will not tear. Heat a frying pan and pour a couple or three tablespoons of batter. Quickly spread the batter in a circle and bake the pancake on just below medium heat. If you cook spinach pancakes on too high heat, they will brown, and we need to keep a deep green color. For the first pancake, you can grease the pan with butter. Then flip the pancake and cook the second side. Serve the original green pancakes with sour cream or any other addition of your choice. They stay soft and very tender for a few days, just don't forget to wrap the pancakes in clingfilm or wrap them in a bag so they don't dry out. Surprise your family with these unusual thin pancakes!
