Products (for 2 servings)
Milk - 210 ml
Wheat flour - 200 g (1.5 cups of 200 ml)
Butter - 25 g
Egg - 1 egg.
Baking powder - 1 tsp.
Soda - 1/4 tsp.
Vegetable oil (for frying) - 1-2 tbsp.
*
For serving (optional)
Raspberries - 6-7 pcs.
Blackberries - 4-5 pcs.
Honey - 2-3 tsp.
Fresh mint - 5-6 leaves
step 1.
Prepare the products according to the list.
step #2
Melt the butter in the microwave (at minimum power, in short bursts, stirring every 15-20 seconds) or in a saucepan on the stove (over low heat). Cool the butter slightly.
In a bowl, combine the milk, egg and melted butter.
Step #3.
Mix until smooth.
Step #4.
Add flour, baking powder and baking soda.
Step #5.
Mix until a smooth and moderately thick batter is obtained.
Step #6.
The dough for the pancakes can be placed in the pan with a teaspoon. I, on the other hand, put the batter in a plastic saucepan to speed up the process. A pastry bag or a regular plastic water bottle with a dispenser for drinking is also great for this purpose.
Step #7
Heat a frying pan with a little vegetable oil over medium heat (I oil the pan only for the first batch of fritters). If desired, if the pan has a good non-stick coating, you can use no cooking oil at all.
Spread the small fritters apart from each other.
Fry for about 1 minute or until the surface is matte.
Step #8.
Flip and fry for about 30-60 seconds more.
Step #9
Prepare mini fritters this way using all of the batter.
Step #10
Serve the finished mini-fritters to the table, garnishing them with berries and honey if desired.
