Ingredients
Oat flakes - 100 g
Coconut chips - 80 gr
Wheat Flour / Flour - 140 g
Sugar - 70 gr
Vanilla sugar - 1 tsp.
Salt (pinch)
Butter - 100 gr
Honey - 65 gr
Soda (+ boiling water - 2 tbsp.) - 1 tsp.
Candied fruit (or zest of 1 orange) - 30 gr
Recipe "Oatmeal Coconut Cookie":
Cut candied orange peel into small cubes. If there are no candied oranges, substitute 1 orange zest.
In a suitable container, mix together the oats, coconut flakes, flour, sugar, vanilla sugar, salt, and candied fruit and stir to combine.
Heat the butter and honey until the butter has dissolved, but do not boil. Add 2 tbsp. of boiling water to the baking soda and stir. Pour into the melted butter and honey, stir and add to the dry ingredients. All is well mixed. Form balls about the size of a walnut. Place on a baking tray lined with parchment. Bake at 180° C for 10-14 minutes
