YOU WILL NEED:
- 1.5 tbsp. flour (all purpose flour)
- 1 tsp. cinnamon
- 1 tsp. baking powder
- 1 tbsp. oat flakes
- 1½ tbsp. sugar
- 1 tbsp. chopped prunes
- 1 tbsp. almonds
- 2/3 tbsp. yogurt (preferably with prunes)
- 3 Tbsp. olive oil.
- Preheat the oven to 180 degrees C (356 degrees F).
- Finely chop the prunes.
- Chop the almonds.
- Sift the flour with baking powder and cinnamon into a bowl.
- Add oatmeal, sugar, chopped prunes and almonds.
- Ina separate bowl, whisk together the yogurt and olive oil.
- Pour the yogurt mixture into the bowl with dry ingredients.
- Knead the dough with your hands.
- Divide the dough into 20 balls.
- Place the balls in a staggered pattern on a baking sheet lined with parchment paper. Use a fork to flatten each ball. Sprinkle cookies with powdered sugar.
- Bake for 25 minutes.
- Cool the cookies on a baking tray. To separate the cookies from the parchment, spritz the back of the paper with water.
