Pancakes "Russian" - a culinary recipe

INGREDIENTS

 4 cups baked milk

 560 g wheat flour

 25 g yeast

 2 eggs

 25 g butter + more for greasing pancakes

 2 tsp  Sahara

 100 ml cream (20-25% fat)

 1 tsp  with a hill of salt

 vegetable oil for frying

 STEP-BY-STEP COOKING RECIPE

 

 Step 1

 Heat milk and melt butter for pancakes

 Prepare dough for Russian pancakes.  To do this, pour milk into a saucepan and heat to 45-50 degrees.  Melt the cubed butter in a separate bowl.

 Step 2

 Mix the ingredients to make the dough

 Sift 360 g of flour through a fine sieve into a bowl.  Add warm melted butter, milk, yeast and sugar.  Mix thoroughly with a spatula.

 Step 3

 Put the dough for pancake dough to rise in a warm place

 Cover the dough with cling film or a towel.  Put in a warm place for 2 hours.  The dough for the pancake dough should rise well, and bubbles should appear on the surface.

 Step 4

 Beat egg yolks with sugar to make pancake dough

 We continue to prepare pancake dough.  Next, you need to separate the yolks from the proteins.  Beat the yolks with a mixer with 1.5 tsp.  sugar until a mixture of a homogeneous consistency is obtained.

 Step 5

 Whip the whites with salt until strong peaks, prepare the cream for making pancakes

 Beat egg whites with salt with a mixer until sharp peaks.  Pour the cream into a separate container and leave at room temperature for 20 minutes to warm up a little.

 Step 6

 Mix prepared ingredients for making pancake dough

 Stir in the yolk mixture.  Add the remaining flour (200 gr.), Whipped egg whites and pour in a thin stream of cream.  Stir gently, let rise for an hour.  Without stirring, use the dough for baking pancakes.

 Step 7

 Bake Russian pancakes until tender

 Lubricate the finished pancakes with melted butter and stack them on a plate.  Bake pancakes from the remaining dough.  Keep pancakes in a warm place until serving.
