The recipe for the salad with arugula and shrimp:
Peel the shrimp from the shell and fry in a pan with olive oil for a few minutes until pink.
Cut the pineapple into small cubes.
Peel and remove the avocado, dice it and sprinkle with lemon juice so it does not darken.
Cut the tomatoes in half.
Chop the cilantro and garlic.
Put the ruccola in a salad bowl or on a plate, add the tomato, cucumber, avocado and pineapple.
Place shrimp and chopped cilantro and garlic on top.
Add lemon juice, olive oil, salt and freshly ground pepper.
