As a lover of combining chicken meat with fruit and interesting light salads, I couldn't get past Sveta's recipe from her blog sago-cuisine. The salad with chicken breast, cucumber and grapefruit did not disappoint me, it will be repeated periodically in our family menu. I'd be happy if anyone else enjoys it too.
Purple onions are recommended for the salad, lettuce can be any leaf to your taste. The breast can be cooked in different ways, such as grilled on a grill pan.
Experiment with salad dressings, and I have one of the options suggested in Sveta's recipe.
For the chicken breast, cucumber and grapefruit salad, prepare the ingredients from the list.
Ingredients for Chicken Breast, Cucumber & Grapefruit Salad
Finely chop the onions and sprinkle with lemon juice.
Then make the dressing so it has time to infuse. Combine vegetable oil (cotton oil here, but Sveta's is sesame oil, so pick something to your liking...) with orange juice, liquid honey, Worcester and soy sauce. Add a crushed clove of garlic and ground black pepper.
Stir and whisk the mass. It is convenient to do this with an airtight container.
Rub chicken breast fillet with spices (here - curry), sprinkle with vegetable oil, beat on the smooth side.
Salt and fry the pieces of breast on a grill pan or on a regular frying pan.
Slice the cooked chicken breast into thin slices.
Cut cucumbers into slices.
Peel the grapefruit (pink variety here) and cut into slices.
Tear up the leaf lettuce and arrange on serving plates or in a communal salad bowl.
Place the lettuce leaves on a plate
Add all other ingredients: chicken, cucumbers, grapefruit and onion. Sprinkle with sesame seeds if desired.

The dressing mix again, remove garlic from it. Pour this dressing over the salad with chicken breast, cucumber and grapefruit just before serving, not beforehand.
