Steamed Dumplings with Cherries

Flour - 300 g

Kefir (room temperature) - 200 gr

Salt - 0,5 tsp.

Sugar - 1 tbsp.

Soda - 0,5 tsp.

Egg yolk - 1 pc.

For the filling:

Cherries - 450 gr

Sugar - to taste

Preparation of dumplings:

In the flour, add salt, sugar, sift the soda through a sieve (it is better to sift, because the soda can clump). Stir, add the kefir. Knead a soft dough. You may need a little more or a little less flour. Cover the dough and let it rest for 15-20 minutes.

Remove the pips from the cherries. This can be done with a regular straw.

Roll out the dough into a roll with a diameter of 3-4 cm, cut into pieces. From each piece form an oval cake about 2-3 mm thick. In the center of the cake put 1 tsp. sugar and a few cherries. I have large cherries, so the dumplings will be large.

To cook dumplings on steam, you need to take a pot with a wide top, pour water into it by one third. Pull the gauze on top and fix it so that the gauze does not touch the water. Let the water boil.

Place dumplings on the gauze, cover with a lid and cook for no more than 5-6 minutes. If you cook longer, the dough will darken, become dense and not airy.

Brush the finished dumplings with butter and sprinkle with sugar.

Bon appetit!
