This cake is very quick and easy to make, and the dough is runny and creamy thanks to the sour cream and eggs. This recipe is similar to a quiche, but with strawberries. In general, you do not need much activity, and the result will please all members of the family: both small and large.
- flour - 260 gr. - eggs - 3 pcs. - sugar - 200 gr. - sour cream - 160 gr. - refined vegetable oil - 80 gr. - vanillin - 1 gr. - leavening agent - 10 gr. - strawberries - 500-600 gr. - Cane sugar for sprinkles (we can use plain sugar) - 2 tbsp.
1.Wash the strawberries and let them dry on a paper towel. Cut about 200gms of the biggest berries into halves, dice the rest. 2.Now you need to knead the dough. This is best done with a mixer, as it will mix and knead everything quickly. Crack three whole eggs into a bowl and add the sugar. Add vanillin (you can add vanilla essence) or vanilla sugar for flavour. Whisk until the mixture is fluffy and considerably whiter. This will take about 7 minutes. 3.Add the flavourless vegetable oil and sour cream to the egg-sugar mixture. Mix well with a spoon. 4.In a separate bowl, sift all the flour and combine with the baking powder. Pour the liquid part into the dry part and use the wire whisk to knead into a smooth and lump-free dough. 5.Sprinkle the strawberry cubes into the prepared batter and mix together. 6 Prepare the baking tin. Grease the bottom of the mould with vegetable oil or parchment. It is convenient to use a moulded container but you can also use an ordinary one. 7.Pour the batter into the mould and shake a little so that it spreads evenly. Place the berry halves on top, cut side down. 8.Sprinkle the top of the cake with cane sugar (or basic sugar) and place in an oven preheated to 190º and bake for 35-40 minutes. The cooking time will depend on the oven itself and the thickness of the layer. If the mould is larger than 22 cm in diameter, the cake will bake faster and be thinner. 9.If desired, decorate the finished dessert with icing sugar through a sieve. 10.Make tea and enjoy this delicious strawberry shortcake, which is so easy to make
