800 g cranberries
100 g sugar
3-4 tbsp potato starch
100 g honey
1 liter of delicious well, artesian or at least filtered water
STEP BY STEP RECIPE
Whisk cranberries with a blender and strain through a sieve. Set aside the juice and put the cake in a saucepan, add sugar and 1.2 litres of water, bring to the boil, and simmer for 20 minutes.
Strain the broth through a sieve into a clean saucepan, return to a high heat, bring to a boil again, and lower the heat to medium-low. Dilute the starch in the remaining 200 ml of water, pour it in a thin stream, stirring, into the boiling broth.
Continue to stir and simmer until the mixture has thickened, about 3 minutes. Remove from the heat and cool, stirring frequently, for 10 minutes. Add cranberry juice and honey, and stir thoroughly.
