The right pizza dough

The ingredients for the dough are simple: flour, water, and yeast. About the secrets of their combination we will tell further:
Without live yeast or sourdough, you can't make real pizza dough. Dry yeast is a last resort, as it can give off a beery smell or not work at all.
You can take gluten-free flour if you stick to a gluten-free diet, but note that the pizza will turn out crispier.
Close windows and doors so there are no drafts in the kitchen, as yeast dough does not like them.
Take cold water to make the dough - this is important.
Dissolve the yeast completely in the water, and then thoroughly enter half of the flour and mix so that there are no lumps. By the way, you usually take 900 grams of flour for the dough, so you will need 450 grams at this step. The water should be 0.5 liters.
Add the remaining flour gradually, stirring until homogeneous.
Be sure to transfer the dough from the bowl to the table and continue to knead it with your hands. As soon as the thin dough starts to come off your hands, you can finish with the cooking.
According to Italian tradition, the dough should rest for a long time - about 24 hours. But in the home version it is enough to let it "breathe" for 60-90 minutes.
Pizza toppings at home
1. Tomatoes and cheese
This is an incredibly popular topping: margaritas can be ordered not only in every pizzeria, but even in cafes that do not specialize in Italian cuisine.
