INGREDIENTS

3 ..............eggs
100 g ..........sugar
vanilla sugar ..1 tsp.
small pinch of salt
360g ...........cottage cheese
0.5 tsp. .......soda
flour ..........300g
vegetable oil for frying

 

All the ingredients for the doughnuts should be at room temperature! In a bowl we beat 3 eggs, add 100 grams of sugar, a teaspoon of vanilla sugar and a pinch of salt, literally on the tip of a knife.

Whisk everything with a mixer until the egg mixture becomes larger and whiter.

We add the cottage cheese.

Tip It is desirable to beat the cottage cheese with a blender or rub it through a sieve, then the doughnuts will be smooth and even,
because the dough will not contain a grain of cottage cheese, but this is at your discretion.

And beat the eggs and cottage cheese well, until homogeneous. Add the baking soda and beat again with a mixer, so that the baking soda is evenly distributed.

In several steps, add flour and knead a lightly kneaded dough. It took me about 300 grams of flour. This is about the consistency of the dough.

We grease the plate and hands with vegetable oil, tear off small pieces of dough, about the size of a walnut, and form these balls.

Pour more vegetable oil into a deep saucepan and heat well. The amount of oil will depend on the diameter of the pan: the smaller the diameter,

the less oil you need. The doughnuts should float freely in the oil.

 

Advice You need to choose the optimal temperature for the oil. If you have chosen the right temperature, donuts will start to brown slightly on the outside

but not too intensively as soon as you submerge them in the hot oil and they will manage to bake well inside without being sticky. If the oil is not hot enough,

the doughnuts will absorb a lot of fat. If the oil is too hot, then donuts will start to brown too intensively and they will not have time to bake well inside and will be stuck together.

You can check the temperature by throwing a piece of dough into the oil and watching how quickly it browns. Also, you can always adjust the temperature of the oil while frying.

Also, take care and be careful, remember that the oil is very hot!

Deep-fry the doughnuts until they are done, about 5 minutes, the time depending on the temperature of the oil and the material of which the pan is made.

The doughnuts are ready, carefully remove them from the oil with a skimmer and put them on paper towels to remove the excess oil.

These are the ruddy golden doughnuts we got! They are just unbelievable!
