Today I will tell you how to make Stuffed Egg Pancake

Stuffed egg pancake with sausage, buckwheat and assorted vegetables for breakfast. Useful nutritious breakfast not only for school and college students, but also for the whole family. You can take it with you as a snack in a lunch box.

For the egg pancakes

 

Chicken egg (C 0) - 2 eggs

Milk (3,2 %) - 50 ml

Salt - 0,25 tsp.

Sugar (optional) - 1 pinch.

Wheat flour / Flour (take flour in a spoon without a hill) - 1 tbsp.

Sunflower oil (grease the pan) - 1 tsp.

Stuffing

 

Sunflower oil (refined, grease the pan) - 1 tsp.

Buckwheat grits (glass capacity 200 ml., boiled buckwheat) - 0,5 cup.

Vegetable mix (prepared stewed vegetables: zucchini; onions; carrots; bell peppers; tomatoes; dill umbrellas) - 200 g.

Sausage (TM INDILIGHT made of 100% natural turkey meat) - 2 units

I give you breakfast times without cooking the vegetables and buckwheat. The vegetables and buckwheat can be prepared in advance in the evening and simply reheated in the morning. It's up to you to decide what kind of vegetables you want for the filling. I just stewed the vegetables. It's quick. We cook porridge as usual for a side dish. I topped it with a bit of butter. For stuffing in egg pancakes I will use sausage Milk from 100% turkey meat TM INDILITE. Put stewed vegetables on one side of the pan, add buckwheat to them. Stir. On the other side lay out the sausage, pre-cut them (see photo). I'm not going to fry, I just heat everything well.

For egg pancakes, pour 50 ml of milk into a bowl, beat 2 eggs, put salt and sugar and use a whisk to combine. If you are uncomfortable with sugar, don't do it. I like it this way. Add flour and whisk everything well. To bake the pancakes, I will use a non-stick pancake pan D-24 cm. Despite the fact that it is non-stick, I will still grease it a little bit. Egg mixture visually divide in half. We will have 2 egg thin pancakes d-24 cm from its quantity. We pour the mixture onto a well heated pan in a thin layer. The pancake sets instantly.

It's easy to flip. On one half of the pancake we put the vegetables and buckwheat and sausages on top of them. We cover the filling with the other half and continue frying the pancake until one half is nicely browned, and then turn it over carefully with a wide spatula and finish frying the other side until it is ready and nicely colored.

Serve immediately on a plate. Complement the dish with any fresh vegetables. The second pancake can be placed in the lunch box. It will be a snack for a grown-up child at school or university... And it will be just great for an adult at work, too.

A wonderful full breakfast. It has proteins, fats, and carbohydrates.
