Very tasty chicken royally.

It was this delicious chicken in a flavorful curry sauce that was part of the festive menu for the coronation of Queen Elizabeth II of England. The recipe for the coronation chicken is universal and uncomplicated. Any of us can see this for ourselves by making a real royal dish at home on a holiday or a day off. Total cooking time: 30 minutes Number of servings: 4 

Ingredients: 1 tbsp. vegetable oil 

1 small onion - peel and finely chop them 

1 tbsp. mild curry paste 

1 tbsp. tomato paste 

1 tbsp red wine 

150 ml chicken stock 

1 bay leaf Sea salt and black pepper (optional) 

1 tsp. sugar Lemon juice (from half a lemon) 

450 ml mayonnaise 

4 tbsp apricot jam 

2 tbsp heavy cream - mix lightly 450g cooked chicken - cut in cubes 

2 tbsp toasted almond flakes

Preparation: 

1. Prepare the ingredients.   

2. Heat oil in a frying pan until hot, but not boiling. Add the onions and fry over low heat for 3 to 4 minutes.   

3. Add curry paste to the onions and cook for 2 minutes more. Stir in tomato paste.   

4. Remove the pan from the heat and add the red wine, chicken stock and bay leaf. Season with sea salt and ground black pepper, return to heat and bring mixture to a boil.   

5. Add the sugar and lemon juice and cook at a minimum simmer for 5-10 minutes.   

6. Strain the sauce through a sieve into a bowl and let it cool.   

7. Carefully and thoroughly mix the aromatic curry sauce (step 6) with the mayonnaise.    

8. Then stir the apricot jam into the sauce and finally add the cream.  

9. Place the sliced cooked chicken in a large bowl and dress it with the finished flavored curry sauce (step 8). The remaining sauce can be frozen for use in other recipes. Taste the dish, adding spices if desired. 10. Serve chicken royally with a rice side dish. This delicious chicken can also make a great filling for a whole baked potato. Use the flavorful chicken when making sandwiches or when stuffing a pita or pita. Enjoy! Recipe Variation: Instead of cooked chicken, you can use cooked turkey in the recipe.
