Warm salad with potatoes and herring

This combination is an absolute win-win in our country. Nothing tastes better with boiled, baked or fried potatoes than herring. If you're tired of the usual dish and want something new, we suggest making a warm salad with these ingredients, which would be a wonderful alternative to a full dinner.

 

Among the ingredients for the salad: 600 grams of potatoes, one tablespoon of sliced black olives, two boiled eggs, two teaspoons of Dijon mustard, 250 grams of herring, a green onion to taste, two cucumbers, eight tablespoons of natural yogurt, salt and pepper.

 

Potatoes should be placed in a pot, pour boiling water, cover the dish with a lid and put on the stove. Once it boils, turn down the heat to minimum and cook for about a quarter of an hour until the potatoes are completely cooked. Then drain the water and mash the root vegetables with a fork, so that you end up with medium sized pieces. While the potatoes are cooling, prepare the salad dressing.

 

Mix together mustard, yogurt, finely chopped green onions and cucumbers in a small bowl. Add the dressing to the potatoes while they are warm and mix well. Then put chopped eggs into the pot, put pieces of herring and olives on top, add salt and pepper to taste. Serve the salad warm....
