Summer is the season of vegetables, berries and fruits. This is the time when young zucchini appear on garden plots and on store shelves. How many delicious things can be made from this vegetable! I will tell you how to make delicious zucchini cutlets, which dishes from zucchinis can be cooked in the oven and how to make simple dishes from zucchinis in the pan.

Useful tip: zucchini for culinary purposes is better to use unripe, as their flesh is tender and tasty, and the seeds are not hard. Zucchinis are washed, cut off the stalk, peel the skin and rinse again. Cut into circles and slices for frying, cubes for ragout, cups for stuffing.

As a side note: Courgette dishes are particularly tasty and fragrant if you add garlic to them.

Zucchini cutlets

- zucchini - 2 units

- Sweet bell pepper - 1 pc

- eggs - 2 units

- cheese - 150 g

- oat flakes - 0,5 cup

- flour - 3 tablespoons

- herbs and garlic to taste

- spices and aromatic herbs to taste

Grate zucchini on a coarse grater, salt and leave for 10 minutes. In this time we finely chop sweet pepper, herbs and garlic, and grate the cheese.

Squeeze the zucchini mass from excess juice. In zucchini add sweet bell pepper, herbs and garlic, cheese, eggs, oat flakes, spices and aromatic herbs. Leave the mass for 10 minutes, so that flakes become soft.

Pour in flour and mix. If the mass is liquid, add more flour.

Pour the cutlets on a pan with a spoon and fry on a heated frying pan until brown on both sides over low heat. After you turn the cutlets, cover the pan with a lid, so that everything is well-cooked.

Easy zucchini dishes in the oven

Zucchinis with tomatoes and cheese in the oven

- zucchini - 2 units

- tomatoes - 2 units

- sweet bell pepper - 1 pc

- eggs - 1 pc

- sour cream - 3 tbsp

- milk - 2 tbsp

- hard cheese - 30 g

- salt and pepper to taste

Cut zucchinis into 0.5 cm thick rings. Cut bell peppers and tomatoes into rings as well.

In a baking dish, place the vegetables vertically, alternating: zucchini, pepper, zucchini, tomato, etc. Salt and add ground black pepper to the vegetables.

Mix sour cream, eggs and milk, salt and pepper. With this mixture pour the prepared vegetables. Grate cheese on a medium grater and sprinkle it evenly over the vegetables.

Put the form with vegetables in a preheated to 180 degrees oven for 35-40 minutes or until crispy.

Zucchinis with chicken in the oven

- 7 chicken legs

- zucchini - 1 pc

- sour cream - 100 g

- mustard - 1 tbsp

- turmeric - 1 tbsp

- garlic - 3 cloves

- salt, spices - to taste

In a large bowl combine sour cream and mustard. Add turmeric, salt, spices and crushed garlic.

Zucchini cut into squares of 2-3 centimeters and add to the bowl with marinade. Add chicken here as well. Stir and leave to marinate for 1 hour.

Put vegetables with meat in a baking dish, cover with foil or a lid. Bake at 180 degrees for 45 to 60 minutes. 20 minutes before the end, remove the lid to allow the zucchini and chicken to brown.

Zucchini dishes in a frying pan

There's nothing easier than cooking zucchini dishes in a pan. Frying in rings is too trivial. Instead, I will tell you how to cook zucchini in a pan to be original and delicious.

Zucchini with egg in a pan

- zucchini - 1 pc

- chicken eggs - 1 pc

- wheat flour - 2 tbsp

- vegetable oil for frying

- Ground black pepper and salt - to taste

Cut zucchini into 0,5 cm thick slices. Mix together the egg, salt and pepper. Pour whole wheat flour into a flat bowl.

Dip each piece of zucchini in egg mixture so that it is completely covered. Then put zucchini in a plate with flour and coat it on all sides.

Place zucchini in egg and flour batter in heated oil in a frying pan. Fry each batch of zucchini slices over medium heat until crispy, then flip and also fry the second side. Pour enough oil to put pieces of zucchini in it up to half of their height.

Remove the finished zucchini on a plate with a paper towel - it will absorb the excess fat.
