Cottage cheese and banana pie

Ingredients:

FOR BATTERIES:

Butter - 100 gr

Sugar- 50 gr

Flour-220 gr

One piece hen's eggs

Baking powder-5 gr

FOR FILLING:

Cottage cheese-500 gr

Bananas - 3 pcs.

Eggs - 2 pcs.

Vanilla Sugar-10g.

 

Method of preparation:

 

Make dough. Take the butter out of the fridge so that it has time to soften.

 

Mix soft butter, sugar and egg in a bowl. Use a whisk to knead into a smooth mixture.

 

Sift the flour so that it becomes full of oxygen. Mix the baking powder with a little flour to help distribute it through the dough. Add to the butter mixture. Keep in mind that you may need more or less flour than indicated, it will all depend on its properties. Refer to the desired consistency of the dough. It should be soft, elastic, pliable and not sticky to your hands. Gather the dough into a ball, wrap in clingfilm and place in the refrigerator for half an hour. The chilled dough will then be easier to give the desired shape.

 

While the dough is cooling, prepare the filling. In the bowl of a blender, put the cottage cheese, add the egg, vanilla sugar. If desired, you can add a tablespoon of lemon zest for a brighter flavor. Whisk everything into a smooth mixture.

 

If the cottage cheese you are using is wet, place it in a gauze cutter and squeeze out the liquid well. If the banana-cheese mixture is a bit runny, add a couple of spoonfuls of semolina or cornstarch.

 

Wash two bananas, peel and slice them, and sprinkle lemon juice on top so they don't darken. Put one more banana aside. You will need it for decoration.

 

Transfer the fruit to the curd mixture and whisk again.

 

If you like the feeling of pieces of fruit, cut one banana into circles, add it to the curd mixture and mix it gently, so as not to break it.

 

Take a large round cake pan with high rims (18-20cm diameter). Line the bottom with parchment and grease it and the rims with butter.

 

Spread the dough out. Flatten out and form sides. I made a low rim of about 2 cm but you can make it 4-5 cm high.

 

Spread the quark curd and banana filling into the dough base. Use a silicone spatula to smooth out the filling.

 

Preheat the oven to 180 degrees (10-15 minutes before cooking). Keep in mind that everyone's oven bakes differently, so the time and temperature may differ from those indicated. Be guided by the peculiarities of your technique. Bake the pie for about 1 hour. When the edges of the dough are browned, it means it's ready.

 

Important: Do not take the cake out at once, otherwise it will fall apart. Let it cool in the mold at room temperature. Then place it in the refrigerator, preferably overnight (6-8 hours). The cooled dessert will hold its shape well.

 

Before serving, decorate the cake with banana rings, fresh mint leaves. Beautiful and delicious!
