Homemade cutlets in a pan

              INGREDIENTS

700 fat pork neck meat

600 grams of lean ground beef

150 grams of stale white bread

70 ml milk

1 large bulb

2 cloves of garlic

clarified butter

salt, freshly ground black pepper

Rice or plain flour for crumbling

Cut the crusts off the bread, cut the crumb into pieces and soak it in milk for 7-10 minutes. Peel onion and garlic and finely chop or grate.

Cut the beef and pork into medium sized chunks and pass through a meat grinder. With your hands, mix the minced meat with onion-garlic paste, adding bread and milk and 3-4 tbsp. water. Season with salt and pepper.

Step 3.

Beat the minced meat, gathering it into a lump and throwing it forcefully against a work surface. After 5-7 minutes of beating, the mince should stop breaking into pieces. Cover and refrigerate for 30 minutes.

With wet hands, form round, thick cutlets. Dip cutlets in flour, shaking off excess.

Heat oil in a large, thick-bottomed skillet. Pan-fry the homemade cutlets over high heat, on both sides, until crispy, then cook over low heat under a lid, turning occasionally.
