To make a quick version of a vegan dinner you need: a garlic clove, fresh ginger, a tablespoon of olive oil, 150 grams of spinach, 800 grams of chopped tomatoes in their own juice, onions, a tablespoon of curry powder, salt, 500 grams of chickpeas, 120 ml of coconut milk and cilantro to taste.

 

One onion and garlic should be chopped with a knife, and the ginger should be grated. Next, fry the onion in a pan until golden, then add the garlic, ginger and spinach. Cook for a few minutes until the herbs are soft. Place the tomatoes, curry, and salt in the pan and stir. Add the chickpeas, having previously drained the liquid from them, and bring the dish to a boil (five minutes should be enough). Pour in half a cup of coconut milk and mix well. Sprinkle chickpeas and curry with chopped cilantro, if desired.
