It's quite possible that it was the recipe your grandmother or mother used to cook with! Some may be intimidated by the presence of vinegar in the cake batter. Please don't worry: You can't feel it in the cakes, but it's the product that makes them especially tender and flaky. If you're still uncomfortable with vinegar, replace it with lemon juice or white dry wine. INGREDIENTS

For the cream:

sugar - 0,5 cup

flour - 4 tbsp.

vanilla sugar - 1 tsp.

milk - 2,5 cup

egg - 1 pc.

For the dough:

flour - 500 gr

drinking water - 180 ml

vinegar - 1 tbsp.

butter - 250 g

 

STEP BY STEP RECIPE

Step 1.

Cut the chilled butter for Napoleon cake bases into small pieces and mix with sifted flour, until the mixture resembles breadcrumbs. Mix the water and vinegar and pour thinly into the flour mixture. Knead into a smooth dough, wrap in cling film and place in the fridge for 40 minutes.

Divide the dough into 6 equal pieces. Place 1 piece of dough between 2 sheets of parchment and roll out into a 0.5 cm thick circle; roll out the rest of the dough in the same way. Bake the pastry separately in a preheated 190°C oven for 20 minutes each. Allow to cool. Trim the edges, save the crumbs.

Prepare the custard for the Napoleon cake. Boil 1.5 cups of milk with the sugar. Beat the rest of the milk with the egg and flour with a mixer until a homogeneous mass is obtained.

Carefully introduce the resulting egg mixture into the boiling milk. Reduce the heat to low and cook, stirring constantly, for 7-8 minutes, until the cream thickens. Remove from heat and allow to cool completely.

Assemble the Napoleon cake. To do this, smear the cooled cakes with the custard and stack them on top of each other. Lightly press them together. Put Napoleon cake in a fridge for 8-12 hours.
