Mom has the most delicious pancakes! And this is not just the opinion of me and my sister, but my grandchildren and son-in-law think so, and that says a lot)). In addition, her mom taught her from childhood to roll them correctly, so that the filling does not spill out when you bite into them. I highly recommend making pancakes or, as they are called in Ukraine, "nalystnyky" according to my mother's recipe!

 

COOKING METHOD:

 

Let's start by making pancake batter. We take 1 liter of kefir (fat content 2.5%), add 1 egg, 1/2 of salt, 1/2 of a tsp of soda and 2 tablespoons of sugar. Mix well with a whisk.

Gradually add 300 grams of sifted flour. Again mix and at the end add 1 tbsp. of vegetable oil.

Pour the batter on a well-heated pancake pan, and with a swift movement, spread it all over the pan, tilting it in different directions.

It is better to take a non-stick pan and grease it with vegetable oil before the first pancake. In my mother's childhood we used to grease it with a piece of lard.

We fry on medium heat for half a minute, then carefully turn it with a spatula and fry the other side for 20-30 seconds. The pancakes have small holes, but they don't tear.

Transfer the pancakes to a plate, spread small pieces of butter on each one, and sprinkle lightly with sugar if desired.

This number of ingredients makes a whole mountain of fragrant and delicious pancakes.

And now let's make the cottage cheese filling. We add 600g of cottage cheese (9% fat) with a whisper of salt, 3 tablespoons of sugar and beat 2 eggs. Mix well with a spoon until homogeneous. The filling is ready.

Spread 1 tbsp of the cottage cheese filling on the pancake and use a knife to spread it evenly all over the pancake. Roll up into a flat tube.

Before serving, fry the pancakes in a frying pan, greasing it with vegetable or butter.

 

Serve the pancakes hot with sour cream or your favorite jam. Such pancakes are easy to eat and the filling does not fall out. Try it, bon appetit!
