How to prepare a salad with salmon, avocado and spinach:
Wash young spinach leaves and dry well.
Boil the eggs. Cut chicken in quarters, quail in halves.
Slice salmon into small pieces.
Peel the avocado, remove the bone and cut into slices. Drizzle with lemon juice to prevent it from turning black.
Cut cherry tomatoes in half.
Slice a cucumber.
Lay tomatoes, cucumber, avocado, eggs on spinach leaves and top with salmon slices.
Add capers to the salad and pour the dressing we have prepared in advance: olive oil, lemon juice, Dijon mustard and freshly ground black pepper.
Stir the salad right at the moment of serving.
