This apple pie captivates with its unusual combination of crumbly shortbread dough and original flavorful apple filling. A wonderful mix of ease of preparation and an inexpressible tangy flavor. This recipe is recommended to all lovers of apple pies.

Apples are better to use sour-sweet apples, they convey very well the apple mood and flavor to the baked goods. If you have sour apples, you will need to increase the amount of sugar in the filling, in the opposite case, when the apples are sweet - the amount of sugar is reduced.
If necessary, corn starch can be replaced with potato starch.
The amount of ingredients are chosen for baking in a baking dish with a diameter of 26 cm.
Prepare all the necessary ingredients. The butter should preferably be cold. Soak the raisins immediately with hot water, so that they soften and are soft by the time you use them.
In a spacious bowl mix all the dry ingredients: flour, sugar, baking powder, vanilla and salt. Cut the cold and hard butter into small cubes, add to the bowl and rub with your hands with the dry ingredients until you get crumbs.
You should not knead for a long time, so that the butter does not melt from the heat of the hands.
In a separate bowl, beat the eggs and lightly beat with a whisk until smooth.
We add the eggs to the crumbs and knead the dough. It is not necessary to knead for a long time, we just need to mix all the ingredients and gather the dough into a lump.
Separate about 1/4 of the dough, form it into a small cylinder and put it in the freezer, put the rest of the dough in the fridge for 1 hour.
While the dough is infusing, prepare the filling. We wash apples, peel them and take out the core with pips. We only need the flesh.
Grate the apples on a coarse grater and transfer them to a bowl.
We add sugar, raisins, starch and cinnamon to the apples.
Stir to combine. The filling turns out so fragrant and attractive that you want to grab a spoon and immediately start eating it. But we can't. We are making an apple pie.
We take the dough out of the fridge, roll out a circle about 28 cm in diameter and gently transfer it to a baking tin (remember, I have a diameter of 26 cm). Smooth the walls and the bottom.
Spread the filling on the dough and flatten. If you have a very juicy filling, it may not allow the bottom layer of dough to bake well, so you should do one of two things: 1. drain off a little extra liquid, 2. sprinkle the dough with breadcrumbs (you can crumble cookies) before laying out the filling.
Take the rest of the dough out of the freezer, grate it on a coarse grater, and sprinkle it evenly over the filling. Adjust the edges: if somewhere the wall is sticking out too high, flatten it. If desired, you can sprinkle a little sugar on top.
We put it to bake in a preheated to 180 ° C oven for 35 minutes. If 5 minutes before the end of baking the top of the pie is still light, then move the form to the top, so that the top of the pie gets well baked and gives a beautiful dark golden color. After baking, let the apple pie cool a bit, take it out of the mold, and sprinkle with powdered sugar if desired. Look how beautiful the pie is!
The apple pie is ready! It can be served warm (for example, with or without an ice cream scoop) or cold from the fridge: the pie is delicious in either state.
