Kefir pancakes with berries and pine nuts

  Starting the morning with a proper breakfast: kefir pancakes with berries and pine nuts

Ingredients:

Eggs - 1 pc. 

Sugar - 35 grams

Soda - pinch

Salt - pinch

Kefir - 140 ml 

Wheat flour - 115 gr 

Butter - 50 g 

Vegetable oil - 2 tablespoons. 

Cream cheese - 30 gr 

Pine nuts - for decoration

Berries for decoration

 

Method: 

Crack the egg and separate the yolk from the white. In a separate bowl mix the egg yolk with sugar, salt, baking soda, kefir and flour. 

 

Melt the butter and pour into the mixture. Mix thoroughly.  

 

Separately whisk the egg white and add to the prepared dough. Stir gently with a spatula to avoid breaking the air bubbles that have formed in the protein. 

 

Using a spoon or small ladle, pour the batter into a heated frying pan with vegetable oil to make pancakes about 5 cm in diameter (they will increase in size as they cook). 

 

Fry the fritters on each side until golden brown. 

 

Transfer the fritters to a plate and let them cool. Then return them to the pan and sprinkle with the sugar and pine nuts. Wait for the caramel to form. 

 

Serve the finished pancakes with cream cheese and fresh berries.
