Yeast scones with yogurt filling

Yummy and very tasty yeast scones with fried onions, turkey sausage and cheese. Nourishing and easy to make - a great combination for an every day recipe. You can take them for a snack at work and put them in the kids' school.

Ingredients for "Yeast scones on yogurt with filling":

Wheat flour / Flour (+2-3 tbsp for dusting) - 600 g

Yogurt (2,5 % fat, it can also be fruit but without fruit) - 250 gr

Milk (3.2 % fat, warm t 30-40 C) - 150 ml

Sugar - 2 tsp.

Yeast (dry quick) - 1 tsp.

One hen's egg (1 yolk for greasing the muffins) - 1 egg

Salt (for dough) - 1 tsp.

Butter - 130 g

Cheese - 100 g

Sausage (turkey "Grandos", TM "INDILITE") - 300 gr

Onions - 2 units

Sesame (fried) - 1 tbsp.

Vegetable oil - 2 tbsp.

Sour cream (10% fat) - 3 tbsp.

Cooking time: 180 minutes

 

Number of servings: 8

 

1. Prepare the sourdough. Warm milk (50 ml) is mixed with yeast and sugar 1 tsp. After activation (20 minutes, foam appears), add the remaining milk, sugar, warm yogurt, 1 tsp. salt and 1 egg. Beat with a whisk.

2. Sift 2/3rds of the flour into the liquid mixture.

Recipe "Yeast Scones with Yogurt and Stuffing":

 

1. Prepare the sourdough. Warm milk (50 ml) mix with yeast and sugar 1 tsp. After activation (20 minutes, foam appears), add the remaining milk, sugar, warm yogurt, 1 tsp. salt and 1 egg. Whisk with a whisk.

 

2. Sift 2/3rds of the flour into the liquid mixture.

 

3. Knead the dough.

 

4. Sprinkle the remaining flour (1/3 part) on the countertop and knead the dough. Gather the dough into a clump and round it out.

 

5. Brush the bowl and dough with vegetable oil (1 tbsp.) and cover with a lid or clingfilm. Place the bowl in a warm place to allow the dough to rise 2.5 times, for 1.5 hours.

 

6. Let's prepare the filling. I have turkey sausage, semi-hard cheese and onions.

 

7. Rub sausage and cheese on a coarse grater.

 

8. Peel the onion and cut into small cubes. Fry onion in heated butter until it becomes transparent. You can add seasoning (0.5 tsp.) for vegetables and some salt.

 

9. Add the sausage to the pan, stir and remove from the stove.

 

10. Knead the dough once it has risen.

 

11. divide the dough into 8 equal parts. Roll dough into balls and grease with vegetable oil (1 tbsp). Cover with a transparent bag and leave for 10 minutes.

 

12. Dust a worktop with flour and roll out one ball of dough into a thin layer (~ 40 cm). The thinner, the better.

 

13. Grease the dough with melted butter and spread the filling, sprinkle with cheese.

 

14. Roll up the layer of dough with filling.

 

15. Shape the roll into a "snail" and dip the bottom into flour.

 

16. Then carefully with hands or a rolling pin we roll out the "snail" a little...

 

 

17... To the diameter of a tea saucer.

Cover a baking tray with a silicone mat or baking paper and grease with butter (the circle where the workpieces will be).

 

18. Spread the pieces on the baking tray and grease with sour cream or milk. Then I put the tray in an oven heated to 40 C for 20 minutes or until the tortillas double in size.

 

19. After that, smear the tortillas with whipped egg yolk and 1 tbsp of milk and sprinkle with toasted sesame seeds. Bake the tortillas in a preheated 190 C oven for about 25 minutes, or until done.

P.S. A little tip to know that the dough is well kneaded. Press your finger on the middle of the dough ball. If the middle begins to align, then the dough is well kneaded! If there is a "dimple," keep kneading.
